Recipe

  • Gently heat an oven-safe on low heat. Place the breast within the pan, have the skin side down, and then cook gently on medium heat without touching for about 10 minutes.
  • Then remove the rendered fat from the skillet as required during cooking.
  • Turn the duck breast over within the pan and continue cooking within the oven for 10 minutes or until it reaches an indoor temperature of 58°C (137°F). The breast should be medium-firm to the touch and still pink inside, or one can say raw.
  • Remove the breast from the oven and place it on a plate. Let represent 5 minutes, loosely covered with aluminium foil.
  • Next, season with fleur de sel to taste if required. Slice on the bias or serve whole.
  • Use cooking time as a guide only. Note that cooking times may vary, counting on many factors, like the sort of oven used, the breast’s dimensions, the number of breasts cooked at an equivalent time.
